Who am I?
I am a half Mennonite, half Presbyterian (a Menno-terian perhaps) and in the midst of my third year in a PhD program at the School of Oriental and African Studies at the University of London. My PhD focuses on peacemaking, development and faith-based NGOs working in East Africa. Since I am in the third year of my program, I have been writing from various locations – the small town in Michigan where I grew up, London, Uganda and Kenya.
Why am I doing this?
The Mission: In the spirit of the movie Julie and Julia, I decided that I needed a cooking project of my own. And, since I am currently writing a dissertation on Mennonite Central Committee, I decided that I should try to cook every recipe in the MCC-sponsored cookbook Extending the Table. So, armed (or in Mennonite tradition, unarmed!) with a kitchen full of Grandma’s cooking utensils and my trusty sidekick, sous chef and husband, Mateo – the adventure begins!
More information on the Extending the Table cookbook can be found here:

And if you happen to live in the Three Rivers area, World Fare sells these. Outside of Three Rivers, most Ten Thousand Villages stores also carry them.
Emily,
This is amazing! I wish you all success on your PhD and cooking adventure. Do you mind if send this blog around to all my colleagues here at MCC?
Best,

Emily, I vaguely knew you were doing this from FaceBook, but this is my first time to your blog. Excellent. I lost my copy of Extending the Table in the divorce :(, but got a copy of Simply in Season about the same time and it is now my all-time favorite cookbook. I’ve not yet found a recipe in it that I don’t like.
